Two-Minute Chocolate Brownie Cake
Makes One Individual Serving

Ingredients:
1/2 cup whole wheat flour
1/4 tsp sea salt
1/4 tsp cinnamon
1 1/2-2 Tblsp cocoa
1-2 Tblsp semi-sweet chocolate chips
1/2 tsp vanilla
2 Tblsp soy milk
1/2 banana mashed (I recommend you use the whole banana because mine came out a little dry)
1/3 cup maple syrup
2 Tblsp canola oil

In a medium bowl, place all of the ingredients except the chocolate chips and mix until well distributed. Transfer the batter to a three-cup microwave-safe bowl. Sprinkle with the chocolate chips. Put the bowl in the microwave for about two minutes. Don't overcook it or it will come out dry. You could also try using a different egg replacer such as ground flax seeds and water if you don't want that banana taste in your brownie cake.

A cake in two minutes sounds like my kind of cake! I know some vegans are microwave-phobes, but the microwave doesn't bother me at all! Oh goodness, that looks mmm mmm delicioso.

This sounds really great...although I can't eat it right now because I'm on a diet, and when I calculated all the calories in a recipe calculator it came out to 966! That's almost 1000 calories. That's probably why it's so tasty though!
