A Late Start

All this week we have the TAKS test which stands for Texas Assessment of Knowledge and Skills. The only good thing about this test is that we sophmores got a really late start today (4 hours late!) and we only have two classes a day. Other than that, it's really boring and long.

So today I woke up at 8 a.m. and made myself a breakfast of whole wheat couscous and fresh organic carrot juice. It was pretty good but didn't quite fill me up. At 11:30 a.m. I fixed myself a very colorful and filling lunch (pictured above). It included whole grain capellini with a mixture of marinara, tofu, corn, peas, and garbanzo beans. On the side I had brussel sprouts seasoned with dijon mustard, soy sauce, EB, and garlic powder. The bagel chips on the side were also enjoyed with some Tofutti Cream Cheese and sun-dried tomatoes.

When I came back from school today at 5 p.m. I wasn't really hungry so I just waited a couple of hours before making myself the delicious looking pizza pictured above. For the crust I used a simple mixture of WW flour, water, baking powder, and salt (yes, it's yeast-free!). Since I had already used some marinara sauce in my pasta earlier today, I decided to spread the crust with barbecue sauce. Then I topped the pizza with chopped red onions, garbanzo beans and broccoli. After 20 minutes in the hot oven, it was ready for me to enjoy. The crust was nice and thick - just the way I like it. Even though I used a really small pizza pan, I only ate half the pizza because it was super filling. Next time I'll experiment with some other veggie combinations and possible add some soy cheese if I can get my mom to take me to Whole Foods.

Your spaghetti and pizza look great! We like spinach and sundried tomatoes on our pizza, along with whatever fresh veggies are around.

I know how boring the TAKS is - hang in there, school's almost over.

The pizza sounds yummy and looks awesome! I prefer pesto and tofu ricotta on my pizzas, soy cheese optional :) Oh and I loooove the Amy's frozen pizzas for when i'm too lazy to make it myself.

Hands down, roasted eggplant is my FAVORITE pizza topping! It's incredible. I also love mushrooms, onions, black olives, artichokes, and roasted red peppers! I guess I just really like pizza...

Ugh, that’s sooo mean of the Auntie Anne’s you went to! I usually only have to wait an extra 2-5 minutes… only once, the 2 minutes turned into 15, and the guy was SO apologetic that he gave me the pretzel for free AND gave me a coupon for a free pretzel on my NEXT visit as well!

Your pasta dinner looks amazingly delicious, and it looks well-balanced/healthy to boot!

Yuck... I remember TAKS :o/

I love spinach, fresh tomatoes, and zucchini on my pizza. I have never tried BBQ sauce, but boy have you peaked my interest.

Bummer about those horrible school tests. When I was in school we had the same type of tests plus the worst constitution test in the world. If you didn't pass teh constitution test you didn't graduate. It was really hard!

mmm, pizza! we like thin crust with veggie pepperoni, Teese, caramelized onions, green bell pepper and dried oregano.
this is the 2nd pizza i've seen in like 2 minutes and now i really want some!!!

Julianne: I'm actually a self-taught "cook" but I'm still very much in the first stages of the learning process

Vegan Tickles: Unfortunately, my crust came out pretty thick and not doughy at all so I wouldn't recommend it

Anonymous: The recipe for the pizza crust I got online from I don't know where. I'm sure you could just google "Yeast-free Pizza Crust" which is what I did. But then again, I don't recommend this crust.
