
I was craving something chocolatey and decadent today and since I knew my mom wouldn't be happy if I turned on the oven in this 100 degree weather, I decided to go for something else. And what was that something else? None other than my "Two-Minute Chocolate Brownie Cake." I have to admit, the idea wasn't entirely mine. I based it loosely on VegWeb's
Microwave Brownies. Also, I've blogged about this before, offering up an original
version. This time however, I made another version of this super simple and easy dessert and it turned out FABULOUS! Not only was it actually moist for a change, it was almost too good to eat!
Super Moist 2 Minute BrownieServes 1-21 Flax Egg (1 Tbs. ground flax + 3 Tbs. water)1/2 cup sugar1/2 cup whole wheat flour2 Tbs. canola oil2 Tbs. carob powder1 Tbs. chocolate chipsDash of vanillaSoymilkIn a small bowl, combine the sugar and flour. Mix well. Add the oil, vanilla, flax egg, and enough soymilk to make a batter. Throw in the chocolate chips, adding more if desired. Transfer the mixture to a ramekin and sprinkle with additional chocolate chips. Microwave for 2 minutes. Let cool for 10 minutes before digging in.

This super moist 2 minute brownie LOOKS and SOUNDS very good. Do you think this brownie could be made without the carob powder? I have been meaning to try it out, but don't want to rush out to buy it just yet.

lengslog, I cant speak for Paulina. But when I made it, I just used natural cocoa powder and it worked just the same. But in some areas it is harder to find natural or organic chocolates that are vegan, Im lucky for sure.
Sarah: You're right; you can use cocoa in place of the carob if you want. That's totally up to you!
